Try Neal Hirsig's course which he used at Tufts U. http://www.gryllus.net/Blender/3D.html . The only drawback is I think the blender version used is still 2.44. I don't know if anyone had already developed a comprehensive 2.5 tutorial. I had a peek at it and there are so many ui changes, sooo many tweakable things ...
